We would now like to introduce something a little different and wonderfully refreshing: tea sodas.You might wonder, "Why Tea Soda?" While Tea and soda may sound like an unexpected combination, the gentle bitterness and aroma of tea pair beautifully with carbonation. The bubbles lift the fragrance, brighten the flavor, and create a light, refreshing finish that is perfect for warm days or as a sophisticated alcohol-free option.

 

Our Featured Tea: Sencha and Wakocha

At our cafe, we make our tea sodas with two Japanese teas.

  • Sencha(煎茶) is the most commonly consumed type of green tea in Japan. Like gyokuro (玉露)and kamairicha(釜炒り茶), it is characterized by its steaming process: the leaves are steamed soon after harvest to preserve their vibrant green color and fresh character. Its flavor is fresh, grassy, and elegantly rich in umami.
  • Wakocha(和紅茶), also known as Japanese black tea, is black tea produced in Japan using green tea cultivars such as Yabukita and Okumidori, as well as cultivars specially developed for black tea, such as Benifuki and Benihikari. Compared to black teas from other regions, wakocha tends to be lighter-bodied, smooth, and naturally sweet, with low astringency and a gentle, refined character. 

By combining these teas with sparkling water and carefully selected syrups, we create drinks that are layered, aromatic, and visually refreshing.

Ingredients

  • 4g loose-leaf sencha
  • 150ml hot water (60°C/140°F)
  • 15ml rose syrup
  • Carbonated water (made with a soda maker)

Ingredients

  • 4g loose-leaf sencha
  • 150ml hot water (60°C/140°F)
  • 15ml passion fruit syrup
  • Carbonated water (made with a soda maker)
Wakocha Black Tea Soda
Wakocha Black Tea Soda

Ingredients

  • 4g loose-leaf wakocha black tea
  • 150ml hot water (90°C-100°C/194-212°F)
  • Carbonated water (made with a soda maker)
  • 1 dried sliced orange (optional)

How to Make (Common for All 3 Tea Sodas)

  1. Steep the tea: Place the tea leaves in a pot and pour in hot water. For sencha, steep at 60°C/140°F for 1 minute. For wakocha, steep at 90-100°C/194-212°F for 3 minutes.
  2. Chill quickly: In a separate container, add 5 ice cubes and pour in the freshly steeped tea. Stir gently as the ice melts to cool the tea rapidly.
  3. Carbonate the Tea: Pour the chilled tea into a soda maker bottle and carbonate according to your soda maker's instructions.
  4. Serve: Pour the sparkling tea into a glass. Garnish with an orange slice if desired.

  • We use passion fruit syrup from MONIN.
  • The tea leaves we use are shown below.
