A delicate bite-sized Japanese sweet inspired by the bellflower, the official flower of Tajimi City in Gifu Prefecture. Named Mino Hatsugoromo (美濃初衣), this elegant confection reflects the beauty, craftsmanship, and refined aesthetics of the Mino region, renowned throughout Japan for its traditional Mino-yaki pottery.
Created by the artisans of Matsutani-en, a long-established Japanese confectionery shop in Gifu, Mino Hatsugoromo was born from a happy accident during the confection-making process. When sweet bean paste unexpectedly rolled into powder, it inspired a unique texture unlike any other. The result is a delicate sweet with a light, crumbly exterior that gently melts on the tongue, revealing the refined sweetness of carefully selected azuki beans.
This assortment features two signature varieties inspired by traditional Mino ceramics.
Kinako draws inspiration from the warm golden hues of Kiseto ware, one of the classic styles of Mino pottery. Carefully selected roasted soybean powder lends a rich toasted aroma and gentle nuttiness that beautifully complement the smooth sweetness of the bean paste.
Matcha is inspired by the deep green glaze of Oribe ware, one of the most celebrated styles of Mino ceramics. Premium first-grade matcha from Nishio, Aichi, adds a refined aroma, elegant bitterness, and lingering finish that harmonize perfectly with the sweetness of the azuki bean paste.
Made with carefully selected ingredients, including premium Japanese azuki beans, high-grade Wasanbon sugar from Tokushima Prefecture, aromatic kinako, and fine matcha, each piece is crafted with great care. The delicate sweetness and smooth character of Wasanbon enhance the confection's refined flavor and elegant finish.
