The Morita family has been blending tea for some 80 years in the Sayama region of Saitama (north of Tokyo). As a blender, they select high quality leaves from various farms in Japan, and buy it as aracha or processed but unfinished tea. To finish the tea, they sort out stems, dust, etc, then combine the leaves from different farms to create specific taste profiles at specific price points. This blending craft helps to create high quality tea products consistently.
