Japanese Style Chicken in Kudzu Sauce Recipe - Yunomi.life

In Japan, we have a classic thick, starchy sauce called "an" (あん) which we eat with vegetables, seafoods, and tofu.I’ll introduce you to the thick sauce using minced chicken and Kudzu powder. 

Kudzu powder is starch made from the roots of the Kudzu plant ,having lots of health benefits such as improving your gut and circulation.I feel like having Kudzu powder when my stomach is upset.

This recipe is very easy to make. Just add all the ingredients in a pan and heat them, and it is very versatile. Pour it onto vegetables you like, potatoes ,pumpkin and broccoli, etc.Boiled potatoes or boiled Daikon radish with the Kudzu sauce makes me feel well.   

It's fantastic paired with spinach or asparagus.

Chicken in Kudzu Sauce Recipe  

  

INGREDIENTS

[ A ]

300g / 10oz of minced chicken 

3 tbsp of Shoyu (Soy sauce)

1 tbsp of sugar

2 tbsp of Mirin (Japanese condiment)  or replace it with 2 tbsp of white wine and 1 tbsp of honey

200ml of water

1 tsp of juice from ground fresh ginger

 

[ B ] 

about 2 tbsp (25g) of Kudzu powder   

2 tbsp (25g) of water
     

*It's possible to make the sauce with other starches like potato starch, corn starch.

 

 

INSTRUCTIONS

1 Place [ A ] in a pan over medium heat and stir often until the chicken is heated well. 

2 Place [ B ] in a small bowl, and mix well until it is smooth. Pour the Kudzu-water into the pan and bring it to a simmer, stirring continuously until the Kudzu-water gets translucent and glossy.   

Serve warm.

 

It is delicious to have with warm tofu! I sprinkled black pepper and yuzu’s peel on top.

You can add spring onion as a topping like this when serving.
