Hojicha Spiced Biscuits RECIPE
Ingredients
(for 25-30 biscuits)
- 100g/3.5oz unsalted butter, soften to room temperature
- 60g/2.5oz sugar
- 2tsp hojicha powder
- 120g/4oz plain flour
- 90g/ 3.2oz almond powder
- 1 tsp mixed spices (pumpkin spice or cinnamon, ginger, cardamon ,etc)
- 40g/1.5oz finely chopped roasted nuts (walnuts, cashew nuts, pecan nuts, etc)
- 5tbsp- icing sugar, plus extra for dusting

Preheat the oven to 160℃/320F.

In a bowl, beat the butter and sugar until well combined and creamy. Add the hojicha powder, flour, almond powder and spices, and stir with a spatula until everything comes together in a rough dough. Add the nuts and mix well.
- Shape into 2-cm-balls and put on the baking tray with a parchment paper leaving some space between.
- Bake for 20-25 minutes until firm.

Leave to cool on the tray for 5 mins, then, once cool enough to handle, gently roll the balls in the icing sugar and return to the tray. Leave to cool completely.
- Dust with more icing sugar just before serving.
