Hojicha Spiced Biscuits Recipe

Be a star baker this winter with these Christmas biscuits! 

These biscuits will get you in the festive mood, and also get you to breathe a new style into your Chritsmas baking. 

The secret is hojicha (roasted green tea) powder. The pleasant aroma and sweet taste of hojicha add a nice flavor to the biscuits.

These hojicha biscuits taste rich with nuts and spices. Are there any spices such as cinnamon, ginger, cardamon, or pumpkin pie spices and any nuts left in your cupboard? Let’s use them for these biscuits. 

 

 

The method is simple. Mix the ingredients together, and form into shapes, and then put them in the oven. You’ll have a lovely aroma while baking. 

Crunchy, nutty and special flavored, these biscuits are sure to be your favorite.

 

 

Hojicha Spiced Biscuits RECIPE

 

Ingredients 

 (for 25-30 biscuits)

  • 100g/3.5oz   unsalted butter, soften to room temperature
  • 60g/2.5oz   sugar
  • 2tsp   hojicha powder
  • 120g/4oz   plain flour
  • 90g/ 3.2oz  almond powder 
  • 1 tsp mixed spices (pumpkin spice or cinnamon, ginger, cardamon ,etc) 
  • 40g/1.5oz   finely chopped roasted nuts (walnuts, cashew nuts, pecan nuts, etc)
  • 5tbsp-   icing sugar, plus extra for dusting 

 

Instructions

  1. Preheat the oven to 160℃/320F.

  2. In a bowl, beat the butter and sugar until well combined and creamy. Add the hojicha powder, flour, almond powder and spices, and stir with a spatula until everything comes together in a rough dough. Add the nuts and mix well. 

  3. Shape into 2-cm-balls and put on the baking tray with a parchment paper leaving some space between.
  4. Bake for 20-25 minutes until firm.
  5. Leave to cool on the tray for 5 mins, then, once cool enough to handle, gently roll the balls in the icing sugar and return to the tray. Leave to cool completely.

  6. Dust with more icing sugar just before serving.
