Grown without use of pesticides/synthetic fertilizers, Sahohime is a matcha blessed by its namesake, the goddess of spring. It is characterized by a creamy umami flavor rarely found in organically grown leaves.

佐保姫 Sahohime - the goddess of spring. In theory of the five elements, spring is represented by the east, and Mt. Saho was located east of Heijo-kyo, the ancient capital of the Nara period (710 - 794 AD). The goddess is said to wear a white dress as soft as the spring mist.

\nStorage: We recommend storing one 30-gram bag at room temperature for daily use in the screw top can or resealable bag, and the remaining in your freezer for long-term storage if you buy more than one at once. NOTE: For freezer storage, double-seal in a plastic ziplock bag and tupperware container for maximum freshness and to avoid other food smells from affecting the matcha. Always allow the bag to sit for 24-hours before unsealing to acclimate to room temperature. This avoids condensation from damaging the matcha powder.

Did you know matcha is best when it's freshly ground?
\n
How good your matcha is depends of course on the quality of the underlying leaf. However, producers buy many different production lots from many different farmers. Their skill, the reason why we call them master blenders, is in blending the leaves prior to grinding to create a specific profile in terms of powder color, powder aroma, grain size, matcha color, and most importantly the flavor of the matcha.
\n
While the harvest season can make a big difference in quality since larger autumn leaves will be more bitter and more difficult to grind into fine powder, the harvest year is not necessarily important particularly right after the spring harvest (May - August). At this time, leaves may actually be too fresh to make good matcha--their flavor may create matcha that is very strong in umami but also too bitter. Meanwhile, leaves thathave aged over the past year will be more mellow and perfect for balancing the fresh leaf.
\n
Matcha however does get old quickly after grinding. In 6 months after grinding the color will fade, and the aroma will disappear. After 9 months, the strength of the flavor will also fade. As a result, higher grade matcha tends to have a best by date of 3-6 months, while lower grade matcha has a best by date of 12 months in Japan. Western brands often have a 18-24 month shelf life though.

As a rule, we do our best to ensure that the Yunomi branded matcha is never older the 6 months from grinding, and that matcha other brands are never older than 6 months from procurement.

Modern Heritage Grade, Matcha Kuwari uses only leaves from the region of Zenjyoji in Ujitawara. The family named it “KUWARI” which was the name of Zenjyoji before the middle of Heian era.

This Aoi no Homare matcha is the highest grade usucha from AOI Seicha. It is very low in bitterness and has a balanced harmony that is rich with umami, sweetness, and pleasent aroma. Highly recommended for those who are looking for a higher quality matcha. Since this usucha matcha utilizes a very high ratio of varieties of tea leaves, it can also be used to make a koicha.

Azuma Tea Garden is a family-owned tea farm specializing in matcha products: They are tencha farmers, cultivating leaves that are shaded then processed in the family's factory: steamed, dried without rolling, and refined into even flakes for grinding. These tencha leaves are then, ground into matcha tea powder in the family's new factory that includes both stone mill grinders and a jet air pulverization machine for large scale culinary matcha production. The processing factory for tencha and sencha were once part of a large cooperative, but the family is the only remaining member of the cooperative. Azuma Teruko, originally from China, married into the family after visiting the village and falling in love with her husband. She is now face of the farm, and is helping to convert tea fields from relatives and retiring farmer friends into organic cultivation.

Matcha usage, storage, and quality preservation
\n
Storing in a cool, dry location away from sunlight (25C/75F degrees or lower, constant temperature environment) in the resealable containershould keep the matcha at optimum quality for 1-2 months. The more frequently you open the bag to use your matcha, the faster quality will degrade, but you’ll also be consuming it faster as well. After 1-2 months, the matcha will begin to degrade gradually in color and aroma first, and flavor later.

We don’t recommend storing in the refrigerator unless you are experienced in storing matcha. Odors from other foods in the refrigerator may seep in and contaminate the matcha, and condensation when removing the bag from storage may damage the matcha.

The processing factory for tencha and sencha were once part of a large cooperative, but the family is the only remaining member of the cooperative. Azuma Teruko, originally from China, married into the family after visiting the village and falling in love with her husband. She is now face of the farm, and is helping to convert tea fields from relatives and retiring farmer friends into organic cultivation.

Storing in a cool, dry location away from sunlight (25C/75F degrees or lower, constant temperature environment) in the resealable containershould keep the matcha at optimum quality for 1-2 months. The more frequently you open the bag to use your matcha, the faster quality will degrade, but you’ll also be consuming it faster as well. After 1-2 months, the matcha will begin to degrade gradually in color and aroma first, and flavor later.

Azuma Tea Garden is a family-owned tea farm specializing in matcha products: They are tencha farmers, cultivating leaves that are shaded then processed in the family's factory: steamed, dried without rolling, and refined into even flakes for grinding. These tencha leaves are then, ground into matcha tea powder in the family's new factory that includes both stone mill grinders and a jet air pulverization machine for large scale culinary matcha production. The processing factory for tencha and sencha were once part of a large cooperative, but the family is the only remaining member of the cooperative. Azuma Teruko, originally from China, married into the family after visiting the village and falling in love with her husband. She is now face of the farm, and is helping to convert tea fields from relatives and retiring farmer friends into organic cultivation.

Matcha usage, storage, and quality preservation

Storing in a cool, dry location away from sunlight (25C/75F degrees or lower, constant temperature environment) in the resealable container should keep the matcha at optimum quality for 1-2 months. The more frequently you open the bag to use your matcha, the faster quality will degrade, but you’ll also be consuming it faster as well. After 1-2 months, the matcha will begin to degrade gradually in color and aroma first, and flavor later.

We don’t recommend storing in the refrigerator unless you are experienced in storing matcha. Odors from other foods in the refrigerator may seep in and contaminate the matcha, and condensation when removing the bag from storage may damage the matcha.

Always allow the bag to sit for 24-hours before unsealing to acclimate to room temperature. This avoids condensation from damaging the matcha powder.

Did you know matcha is best when it's freshly ground?

How good your matcha is depends of course on the quality of the underlying leaf. However, producers buy many different production lots from many different farmers. Their skill, the reason why we call them master blenders, is in blending the leaves prior to grinding to create a specific profile in terms of powder color, powder aroma, grain size, matcha color, and most importantly the flavor of the matcha.
\n
While the harvest season can make a big difference in quality since larger autumn leaves will be more bitter and more difficult to grind into fine powder, the harvest year is not necessarily important particularly right after the spring harvest (May - August). At this time, leaves may actually be too fresh to make good matcha--their flavor may create matcha that is very strong in umami but also too bitter. Meanwhile, leaves thathave aged over the past year will be more mellow and perfect for balancing the fresh leaf.

Matcha however does get old quickly after grinding. In 6 months after grinding the color will fade, and the aroma will disappear. After 9 months, the strength of the flavor will also fade. As a result, higher grade matcha tends to have a best by date of 3-6 months, while lower grade matcha has a best by date of 12 months in Japan. Western brands often have a 18-24 month shelf life though.

As a rule, we do our best to ensure that the Yunomi branded matcha is never older the 6 months from grinding, and that matcha other brands are never older than 6 months from procurement.

Steeping recommendation

A little scoop is attached to each bag. Use the spoon to scoop 1 heaping of powder (about half a gram) for every 100-150 ml of hot water.

For cold steeping, use 1 teaspoon per liter of water.

Yoshimitsu Masuda spent the first part of his adult life working in a major farming cooperative where he learned firsthand about the danger of food additives and pesticides. Returning to the family tea farm in 1992 to learn tea making from his father and fellow tea farmers in Shimada, Shizuoka, he was deeply surprised at the amount of pesticides used in tea farming.

Switching to organic farming was not an easy task; insects and disease plagued the first field he was given charge of, crop yield and leaf quality dropped, and he faced criticism from both family and other tea professionals. Steeping recommendation

A little scoop is attached to each bag. Use the spoon to scoop 1 heaping of powder (about half a gram) for every 100-150 ml of hot water.
\n
For cold steeping, use 1 teaspoon per liter of water.
\n
We also recommend that you use a small amount of water and mix with the powder into paste first to get rid of clumps.

Yoshimitsu Masuda spent the first part of his adult life working in a major farming cooperative where he learned firsthand about the danger of food additives and pesticides. Returning to the family tea farm in 1992 to learn tea making from his father and fellow tea farmers in Shimada, Shizuoka, he was deeply surprised at the amount of pesticides used in tea farming.

Switching to organic farming was not an easy task; insects and disease plagued the first field he was given charge of, crop yield and leaf quality dropped, and he faced criticism from both family and other tea professionals. Based on our own tasting, this product has the following profile. However, tastings are not conducted side by side, and different water, ambient temperature, etc. may affect the outcome. Please use this profile as a simple guide.
Umami: 14/20 (20 being the richest umami)
Creaminess: 13/20 (20 being the creamiest)
Lack of Astringency: 13/20 (20 being least astringent)
Lack ofBitterness: 13/20 (20 being leastbitter)

Storage: We recommend storing one 30-gram bag at room temperature for daily use in the screw top can or resealable bag, and the remaining in your freezer for long-term storage if you buy more than one at once. NOTE: For freezer storage, double-seal in a plastic ziplock bag and tupperware container for maximum freshness and to avoid other food smells from affecting the matcha. Always allow the bag to sit for 24-hours before unsealing to acclimate to room temperature. This avoids condensation from damaging the matcha powder.
Did you know matcha is best when it's freshly ground?
How good your matcha is depends of course on the quality of the underlying leaf. However, producers buy many different production lots from many different farmers. Their skill, the reason why we call them master blenders, is in blending the leaves prior to grinding to create a specific profile in terms of powder color, powder aroma, grain size, matcha color, and most importantly the flavor of the matcha.
While the harvest season can make a big difference in quality since larger autumn leaves will be more bitter and more difficult to grind into fine powder, the harvest year is not necessarily important particularly right after the spring harvest (May - August). At this time, leaves may actually be too fresh to make good matcha--their flavor may create matcha that is very strong in umami but also too bitter. Meanwhile, leaves thathave aged over the past year will be more mellow and perfect for balancing the fresh leaf.
Matcha however does get old quickly after grinding. In 6 months after grinding the color will fade, and the aroma will disappear. After 9 months, the strength of the flavor will also fade. As a result, higher grade matcha tends to have a best by date of 3-6 months, while lower grade matcha has a best by date of 12 months in Japan. Western brands often have a 18-24 month shelf life though.
As a rule, we do our best to ensure that the Yunomi branded matcha is never older the 6 months from grinding, and that matcha other brands are never older than 6 months from procurement.
