Farm Introduction

According to Hiroki Murakami, who will become the farm's 4th generation master, the family doesn't know exactly when they started farming tea, though his great-grandfather was the one who built their first processing factory in the late 19th century.

Based in the Yoshiwara district, a mountainous region famous for its sea of clouds within the municipality of Shizuoka City, the family produces about 2 tons of tea altogether per year (first and second flushes).
\n
Their leaves are mostly processed as a near-fukamushi (deep steamed), a steaming technique that creates a tea that has fukashimicha's deep, opaque green color and sweetness, but while also retaining much of the leaf's shape.

From the village of Yuikamatsuka (now simply Yui) in Shimada City, Shizuoka Prefecture, this is a deep-steamed sencha green tea with a deep green color and medium astringency. Near the Ooi River (Ooigawa), the area is blessed with a morning mist that is evidence of the temperature difference between night and day that produces great tea leaf.
Yamane-en is a family-operated tea shop based near Sugamo Station on the Yamanote Loop Line in Tokyo and run by tea master Michio Shiobara. With 40 years of experience in the Japanese tea industry behind him, Shiobara-san offers unique teas sourced from small villages throughout Japan as well as a number of tisanes popular in Japan for their health benefits.

In 1892, Dobashien's founder Tetsugoro Dobashi established a small tea shop in a quiet residential district on the outskirts of Tokyo. The hime midori is a late spring harvest premium sencha leaf from the award-winning Kurihara family (based in Yame, Fukuoka prefecture). They are one of Japan's best at creating a premium green tea called gyokuro. We are happy to share that tea farmer Akio Kurihara creates some of the best teas we have. This is a popular sencha that is perfect to send as a gift and a go-to sencha at home. The Kurihara family recommends steeping in hot water between 70-80 degrees for about a minute. The sweetness will spread even more and fill you with delicious delight.

Like their Premium Sencha, Suiren (but with smaller leaves), this Sayama region green tea is can be steeped to be very astringent with a touch of umami (savoriness) using hot water, or with a great balance between astringency (shibumi) and umami savoriness using warm water.

While not quite what we would call a kabusecha, the leaves for Kakurei are shaded for about 10 days before harvest for extra umami flavor notes, and low astringency.

Morita-san's premium sencha takes the name Suiren, the Japanese name for the water lily. Translated literally to \"sleeping lotus\", Suiren flowers are related to the lotus flower, and is the flower that Claude Monet studied in his famous Water Lilies painting. The lotus is a symbol of enlightenment in Japanese and Chinese aesthetics because the plant rises from the darkness of the pond and blooms into the light.

NaturaliTea is a private cooperative of farmers managed by the Kinezuka family, whose own tea fields produce over 20% of the cooperative's teas. Based in the hills of Fujieda, Shizuoka, the cooperative was established nearly 40 years ago by Toshiaki Kinezuka.
