Farm Introduction

According to Hiroki Murakami, who will become the farm's 4th generation master, the family doesn't know exactly when they started farming tea, though his great-grandfather was the one who built their first processing factory in the late 19th century.

\n

Based in the Yoshiwara district, a mountainous region famous for its sea of clouds within the municipality of Shizuoka City, the family produces about 2 tons of tea altogether per year (first and second flushes).

\n

Murakami-san began producing black tea just a few years ago but has been winning awards in Japan for his production.

Komatsu Naomi of Kanes Tea Factory always has the best tea in mind for the Japanese tea connoisseurs of Yunomi.life.

\n

This yabukita cultivar tea leaf was shaded for 5 days before harvest beneath traditional straw shading (the kind used in heritage grade gyokuro and matcha). This creates the exquisitely balanced sweetness.

\n

It was handpicked with the 30 pluckers directed to choose only the bud and first leaf for the most delicate needle. Only 3kg were harvested of which we have 1kg.

\n

Then, light steamed (asamushi), the leaf remains intact, allowing a very careful crafting of the leaves into perfect needles, resulting in a translucent golden liquor.

\n

Finally, the finishing of the tea is done by hand, filtering out tea fannings and stems, the slowly green-roasted on a tradition Japanese washi paper table for about 8 min (heated to 77C, with the leaf heating to about 45C). The table itself was heated with bamboo charcoal (binchotan) with the heat adjusted by adding ash created from straw.

\n

To prevent the needles from breaking in transit to you, the tea is packaged in mini matte black cans. Note: limit of 50g per customer.

\n

 

\n

Steeping notes

\n

Tea: 2-3 grams. Time: 1-2 min. Water: 50C/122F, 30 ml.

\n

The 2nd steeping may use hotter water, steeping for 10-15 seconds. I prefer 70C/158F and 200 ml of water. Subsequent steepings may require more time - generally 60 seconds. A final steeping can be of cold water, 500 ml, and left in the refrigerator overnight for a light, refreshing iced tea the next morning.

\n

Alternatively, steep it under ice, allowing the ice to steep the tea leaf as it melts.

\n

Recommended tea ware: Shiboridashi

It was handpicked with the 30 pluckers directed to choose only the bud and first leaf for the most delicate needle. Only 3kg were harvested of which we have 1kg.

\n

Then, light steamed (asamushi), the leaf remains intact, allowing a very careful crafting of the leaves into perfect needles, resulting in a translucent golden liquor.

\n

Finally, the finishing of the tea is done by hand, filtering out tea fannings and stems, the slowly green-roasted on a tradition Japanese washi paper table for about 8 min (heated to 77C, with the leaf heating to about 45C). The table itself was heated with bamboo charcoal (binchotan) with the heat adjusted by adding ash created from straw.

To prevent the needles from breaking in transit to you, the tea is packaged in mini matte black cans. Note: limit of 50g per customer.

Steeping notes

\n

Tea: 2-3 grams. Time: 1-2 min. Water: 50C/122F, 30 ml.

\n

The 2nd steeping may use hotter water, steeping for 10-15 seconds. I prefer 70C/158F and 200 ml of water. Subsequent steepings may require more time - generally 60 seconds. A final steeping can be of cold water, 500 ml, and left in the refrigerator overnight for a light, refreshing iced tea the next morning.

Alternatively, steep it under ice, allowing the ice to steep the tea leaf as it melts.

A first flush (spring) harvested, award-winning Japanese black tea (Wakocha or Wakoucha) made with the rare Izumi cultivar from the northern region of Sashima, Ibaraki Prefecture, this tea is lightly oxidized by Yoshida Tea Garden but otherwise processed as black tea. This creates an interesting oolong-like tea with notes of jasmine.

Best in Japan: Award-Winning Matcha

World renowned farmer Kiyoharu Tsuji’s tencha (the green tea used for matcha) has won numerous awards at the Kyoto, West Japan (Kansai), and National levels. A careful selection and processing of this Asahi cultivar is generally used for these competitions. 

\n

In recent years.... Asahi cultivar won the top Minister's Award at the 2022 National Tea Competition in the tencha category (this batch was harvested at a similar time as the winning competition batch, but submitted to regional tea competitions). In 2023 and 2024, the Asahi cultivar won 3rd place at the National Tea Competition.

About the Farmer

\n

Tsuji-sensei, a fifth generation tea farmer, is one of Japan’s top cultivators and producers of tencha, and his Asahi cultivar tea field has helped him win dozens awards over the years at the regional and national level. The accumulation of accolades have led to the prestigious Prime Minister’s Award for agriculture in 2017, and most recently the Minister of Agriculture's Award for tencha at the 2022 National Tea Competition, the top award for the leaves that are used for matcha.

World renowned farmer Kiyoharu Tsuji’s tencha (the green tea used for matcha) has won numerous awards at the Kyoto, West Japan (Kansai), and National levels. A careful selection and processing of this Asahi cultivar is generally used for these competitions.

In recent years.... Asahi cultivar won the top Minister's Award at the 2022 National Tea Competition in the tencha category (this batch was harvested at a similar time as the winning competition batch, but submitted to regional tea competitions). In 2023 and 2024, the Asahi cultivar won 3rd place at the National Tea Competition.

About the Farmer

\n

Tsuji-sensei, a fifth generation tea farmer, is one of Japan’s top cultivators and producers of tencha, and his Asahi cultivar tea field has helped him win dozens awards over the years at the regional and national level. The accumulation of accolades have led to the prestigious Prime Minister’s Award for agriculture in 2017, and most recently the Minister of Agriculture's Award for tencha at the 2022 National Tea Competition, the top award for the leaves that are used for matcha.

This fukamushicha from tea garden Shuchi in Morimachi Village, Shizuoka, is made from a single cultivar, the new and still rare Kirari 31, and is the very first harvest in 2022 from a new field.

Refined by Osada Tea, the fukamushicha won the Platinum Medal at the 2022 Nihoncha Awards, held by the Nihoncha (\"Japanese tea\") Instructor's Association. Unlike regional and national tea competitions held throughout Japan featuring the unrefined tea leaves that come from farmers, the Nihoncha Awards accepts entries from farms, factories and sellers that are commercial products, refined teas meant for drinking by consumers. Awards are given out in August judged by a select panel of experts while they over winners in several categories are chosen after tea tastings are held for the general public (several hundred tasters) in December—a people’s choice type of award.

Production

\n

Kohaku is produced by withering (ichou 萎凋) hand-picked tea leaves from Shimizu-san's private tea garden to create the floral aroma. The secret of the aroma comes in part from the thicker leaves but also from the process of withering, in which the harvested tea leaves are carefully withered to enhance their scent.

\n

Harvested leaves are withered in the sun then withered further indoors

\n

The withered leaves are then pan fired using a method known as kamairi oolong tea manufacturing (釜炒り製烏龍茶製法) on specialized Taiwanese tea processing equipment. Finally, they are green roasted using the basket-firing method.

\n

What’s different in the platinum version?  The Kohaku Platinum tea leaves are all hand-picked at Shimizu-san’s own tea garden. Because the tea leaves are hand picked, you will find the tea leaves to be quite large - with thick tea leaves and long stems.

This tea is deliciously sweet; take a first sip, swallow, then breathe out slowly through you nose to taste the aroma of flowers in your throat. In comparison to the original Kohaku, Kohaku Platinum is a richer experience.

Production

\n

Kohaku is produced by withering (ichou 萎凋) hand-picked tea leaves from Shimizu-san's private tea garden to create the floral aroma. The secret of the aroma comes in part from the thicker leaves but also from the process of withering, in which the harvested tea leaves are carefully withered to enhance their scent.

\n

Harvested leaves are withered in the sun then withered further indoors

\n

The withered leaves are then pan fired using a method known as kamairi oolong tea manufacturing (釜炒り製烏龍茶製法) on specialized Taiwanese tea processing equipment. Finally, they are green roasted using the basket-firing method.

What’s different in the platinum version?  The Kohaku Platinum tea leaves are all hand-picked at Shimizu-san’s own tea garden. Because the tea leaves are hand picked, you will find the tea leaves to be quite large - with thick tea leaves and long stems.

Therefore, tea bushes are cultivated in the traditional Japanese chagusaba method where grass is used as mulch to protect and flavor the tea leaves. No flavorings and additives have been used. Matsumoto-san is the Silver Medal Winner of the 2014 International Tea Tasting Competition.

A unique sakura (cherry blossom) leaf black tea from Chiyonoen that has been in the process of experimentation since 2016. This black tea is made by blending handpicked leaves from their own sakura trees with their tea leaves, then processing the blended batch with their black tea. With this characteristic black tea, the Harashima family won the Fine Product Award at the 2017 Nihoncha Awards (a kind of people's choice award held annually). Naturally flavored, this award-winning black tea has a pleasant spring aroma which comes from sakura leaves.

Chiyonoen Tea Farm is a small tea garden operated by husband and wife farmers Masashi and Eri Harashima deep in the mountains of Yabe Village, Fukuoka, Japan. The 3rd generation farm specializes in high grade mountain-grown sencha and gyokuro. Established by his grandfather and the farm's namesake, Chiyokichi.

Hiroki Matsumoto, the young farmer at Kaneroku Matsumoto Tea Garden is always challenging himself to create unique and unusual teas. His inspiration comes from the fact that many tea farmers around him in Shizuoka (perhaps, the best known prefecture for tea in Japan) are already making very good and high quality tea. While the focus of the generations before him was to sell cultivated tea to wholesalers, during his time as a tea farmer, Kaneroku Matsumoto Tea Garden began to make their own products, which allowed Matsumoto-san to directly interact with customers (i.e., the people who drink his tea!). These interactions shifted something in him as began thinking about creating his own style of tea, one which wasn’t limited by the labels placed as \"Shizuoka-cha\" or \"Shimada-cha\".

The peach wood smoked black tea is just one of Matsumoto-san’s intriguing smoked black teas. Hiroki Matsumoto, the young farmer at Kaneroku Matsumoto Tea Garden is always challenging himself to create unique and unusual teas. His inspiration comes from the fact that many tea farmers around him in Shizuoka (perhaps, the best known prefecture for tea in Japan) are already making very good and high quality tea. While the focus of the generations before him was to sell cultivated tea to wholesalers, during his time as a tea farmer, Kaneroku Matsumoto Tea Garden began to make their own products, which allowed Matsumoto-san to directly interact with customers (i.e., the people who drink his tea!). These interactions shifted something in him as began thinking about creating his own style of tea, one which wasn’t limited by the labels placed as \"Shizuoka-cha\" or \"Shimada-cha\".

The peach wood smoked black tea is just one of Matsumoto-san’s intriguing smoked black teas. In fact, because at Yunomi, we have a wide selection of his smoked black teas, you may want to try a few flavors to compare across his teas! Matsumoto-san smokes his black teas using the wood from Japanese whisky barrels and utilises wood that comes from the award winning Ichiro Distillery in Chichibu. This smoked tea can be enjoyed cold or hot and can be a great compliment to nuts and/or chocolate. After the tea is harvested, it goes through a process of withering in which the tea leaves are first sun dried, then dried in the shade for about half a day to create the aroma. Each cultivar is hand-fired separately using a hoiro (焙炉 a special table with thick washi paper surface that is heated from the bottom), then blended to complete the Shourai blend. This tea was served to the Japanese emperor and empress to accompany their dessert at Koryo Shrine on September 20, 2017.

This tea also won the bronze medal at the competition, Japanese Tea Selection Paris 2020.

Bocha (BOH-chah) is a type of tea made from larger stems filtered from larger leaves, then usually roasted until brown, and often called \"twig tea\" because it resembles small twigs as a result.

\n

However, Mataki-san doesn't roast this spring-harvested bocha created from single cultivar and shaded okumidori kabusecha that has been deep steamed. Unroasted, and not strictly filtered from tea leaves, it creates a tea with a sweet, delicate scent and rich umami.

\n

A soft aftertaste, gentle to the mouth, this tea will make you want to experience it again and again. On the second round, steep this bocha at a higher temperature and you may be pleasantly surprised by a subtle edge, followed by a mellow sweetness.

Mataki Tatefumi practices the Chagusaba agricultural method for growing tea leaves in which grass (primarily suzuki) grown around the fields are cut, dried, and laid between the tea hedges to prevent weed growth and to fertilize the soil.
